 Yummy Banana Bread


This recipe I found in one of my Canadian Cookbooks so tasty! Hope you like it too!






You'll need:

1/2 cup ( 1 stick) of unsalted butter

1 cup of brown sugar

2 eggs ( should measure 1/2 cup )

3 soft bananas


2 cups of flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1 cup chopped walnuts or chocolate chips


cream butter and sugar together until well combined, add eggs one at a time beating until smooth, blend in bananas .

in a second bowl stir together flour, baking soda , powder,  salt and nuts or chocolate chips, then add to banana mixture , stirring only until all the dry mixture is moistened. 

Add to a well greased loaf pan and bake 1 hour in a preheated oven.

when tooth pick inserted in center comes out clean its done. leave in pan for 10 minutes before transferring to cooling rack.

Heat oven to 350

Mrs Captains Molasses Wheat Bread

 

I use my kitchen aid mixer to mix my bread and it does a great job. 

Take 1/2 cup of warm water and stir in the yeast and 1 tsp of sugar , let it sit and foam up about 5-10 minutes.  

In the large mixer bowl stir together the warm milk , molasses, softened butter , brown sugar and salt.

Mix in the yeast mixture then the whole wheat flour.  

Add all purpose flour one cup at a time until it forms together and is no longer sticky. 

Place in a lightly greased bowl and cover with plastic wrap , let rise 1 to 1 1/2 hours. 

Punch down and shape into 2 loaves, cover and let rise for an hour.  Bake at 375 for 30-35 minutes. Brush top with butter while hot. 


3 packages ( or 6 3/4 tsps ) yeast, 

1/2 cup warm water

1 tsp sugar

1 1/2 warm milk

1/4 cup molasses

1/2 cup butter softened not melted

2/3 cup brown sugar

2 tsps salt

2 cups whole wheat flour

4 - 5 cups all purpose flour
