Apple Cider Donuts
1 cup of apple cider ( reduced from 3 cups)
1 1/2 cinnamon
3 1/2 cups flour
2/3 cup brown sugar
2 tsps baking powder
1 tsp salt
1/2 baking soda
1/4 tsp nutmeg ( some people want more or non nutmeg is an ingredient that every time I make a new recipe I alter until I get it the way I like it)
6 tbsp melted butter
2 large eggs
To reduce the cider take 3 cups of good cider and boil it over medium heat until it measures 1 cup ( I find pouring one cup it the pan and measuring with a ruler than pouring in the other two cups so that way i know when it's done without pouring it out. Let that cool in the fridge.
Combine the 3 cups of flour, brown sugar, baking powder, salt, baking soda , nutmeg and cinnamon well in a large bowl.
Then in another small bowl whisk together the melted butter, eggs and reduced cider.
Pour the wet into the dry ingredients and and fold together until its all wet. At this point I pour the last 1/2 cup of flour on my silicone rolling sheet and pour the mixture onto it to kneed in the last 1/2 cup of flour sometimes I add more and sometimes I don't need it all. Just until its a good consistency to roll out.
roll out 1/2" thick dipping the donut cutter in flour each time to prevent sticking and fry in deep fat ( I prefer Crisco myself and keep it over and over adding new each time I make it, ) usually one minute per side works.
After they are done sometimes I roll them in sugar and cinnamon but they are just as good without.
they are tasty!!
